ATP 측정을 활용한 어린이집 급식 위생 관리의 객관적 평가 지표 도입 필요성

국문 초록

본 연구의 목적은 어린이집의 위생 관리 수준을 객관적으로 평가하기 위해 정량적 지표인 adenosine triphosphate(ATP) bioluminescence 측정법을 적용하고, 그 결과를 정성적 위생 점검 결과와 비교·분석하는 것이다. 기존의 육안 중심 점검은 청결 상태를 수치화하기 어렵고, 실제 오염 수준을 충분히 반영하지 못한다는 한계가 제기되어 왔다. 이에 본 연구는 과학적이고 정량화된 위생 평가 지표의 도입 가능성을 검토하였다. 연구는 2022년부터 2024년까지 안양시어린이급식관리지원센터에 등록된 72개 어린이집을 대상으로 수행되었다. 개인위생과 주방용구위생 항목을 중심으로 연 2회씩 ATP 측정과 위생 점검을 병행하였으며, 시기별 변화와 두 지표 간의 상관관계를 분석하였다. 연구 결과, 주방용구위생 항목의 ATP 수치는 1차보다 2차 점검 시 유의하게 감소하였으나(p<0.05), 개인위생 항목에서는 통계적으로 유의한 변화가 나타나지 않았다. 위생 점검 점수는 두 항목 모두에서 큰 차이가 없었으며, 일부 항목에서 ATP 수치와 점검 점수 간, 음의 상관관계가 확인되었다. 이는 정성적 점검 결과가 일정 부분 실제 청결 상태를 반영하나, 미세한 오염 변화를 충분히 포착하기 어렵다는 점을 시사한다. 결과적으로 ATP 측정은 어린이집 조리 환경의 위생 상태를 실시간으로 정량화할 수 있는 보조 평가 도구로서, 정성적 점검과 병행 시 평가의 객관성과 신뢰성을 높일 수 있음을 확인하였다. 본 연구는 정량적 지표를 기반으로 한 과학적 위생 관리 체계의 필요성을 제시하였으며, 향후 위생교육 및 모니터링 체계 개선을 위한 기초자료로 활용될 수 있다.

영문 초록

The purpose of this study was to objectively evaluate the level of hygiene management in foodservice at childcare centers by applying a quantitative indicator—adenosine triphosphate (ATP) bioluminescence measurement—and comparing it with qualitative hygiene inspection results. Traditional visual inspections have limitations in quantifying cleanliness and accurately reflecting the actual level of contamination. Therefore, this study examined the applicability of a scientific and quantifiable hygiene evaluation index. From 2022 to 2024, a total of 72 childcare centers registered with the Anyang Center for Children’s Foodservice Management were surveyed. ATP measurements and hygiene inspections were conducted twice a year, focusing on personal hygiene and kitchen utensil hygiene. Changes between inspections and correlations between the two indicators were analyzed. The results showed that ATP levels for kitchen utensil hygiene significantly decreased in the second inspection compared with the first (p<0.05), while no significant change was observed in personal hygiene. Hygiene inspection scores showed minimal variation, but a negative correlation between ATP levels and inspection scores was identified in some items. This indicates that qualitative inspections partially reflect actual cleanliness but may not capture subtle contamination changes. These findings suggest that ATP measurement can serve as a supplementary quantitative tool for real-time evaluation of hygiene conditions in foodservice at childcare centers. When combined with qualitative inspections, it can enhance the objectivity and reliability of hygiene assessments and provide a scientific basis for improving hygiene education and monitoring systems.
