색동유치원 급식시간에 나타나는 3세 유아의 편식에 관한 문화기술적 연구

국문 초록

본 연구는 색동유치원 급식시간이라는 시공간적 맥락에서 3세반 유아들이 나타내는 편식의 의미를 이해하는데 목적이 있다. 이에 따라 충북 음성군에 위치한 색동유치원 3세 연두반 유아 6명과 교사를 연구 참여자로 하여 유아들의 편식 행동을 관찰한 문화기술적 연구이다. 이를 위하여 참여관찰 전사본 및 현장노트, 관찰 및 연구 일지, 유아 심층면담 전사본, 교사 심층면담 전사본, 부모 질문지 및 심층면담 전사본등 다양한 자료가 수집되고 분석되었다. 그 결과 첫째, 3세 유아 편식행동의 특징은 특정 음식 좋아하기, 특정 음식 거부하기, 식사에 무관심하기 세 가지로 나타났다. 둘째, 3세 유아 편식 행동의 원인은 유아의 발달이나 감각에 맞지 않는 조리법, 예민하고 불편한 몸과 마음 상태, 가정의 식습관 세 가지로 나타났다. 이러한 결과에 따른 결론은 다음과 같다. 첫째, 색동유치원3세반급식시간에나타나는유아들의 편식행동은 유아가 좋아하는 음식을 마음껏 먹고, 싫어하는 음식을 먹지 않을 기호를 인정받고 선택의 권리를 가진 인격체로 존중받아야 한다. 둘째, 색동유치원 3세반 급식시간에 나타나는 편식행동은 3세 유아들의 씹기 식감, 매운 맛 미각과 관련하여 유아 발달에 적합하고 오감각의 특성을 고려한 조리법에 의한 식단이 제공되어야 한다. 셋째, 색동유치원 3세반 급식시간에 나타나는 편식행동은 유아가 예민하고 정서적으로 불편하게 느끼는 심신 상태에서 스트레스를 느낄 때 문제가 되므로 유아가 자연스럽고 편안한 분위기에서 식사가 이루어질 수 있도록 배려하여야 한다. 넷째, 색동유치원 3세반 급식시간에 나타나는 유아들의 편식행동은 가정의 식습관과 밀접한 관련이 있으므로 가정과의 연계지도가 필요하다.

영문 초록

The purpose of this research was to understand the meaning of the imbalanced diet of the three-year-olds in a spatial context of the Saekdong kindergarten meal time. This was an ethnographic study that observed the imbalanced diet behavior of children. The research participants were 6 three-year-olds in Green class at Saekdong kindergarten, located in Eumsunggoon, Choongbuk. To do this, a variety of data was collected and analyzed, including observation and field notes, observations and research journals, children’s development screening data, copies of children’s-in-depth conference notes, teachers’-in-depth conference notes, and parent questionnaire and parents’-in-depth conference notes. As a result, first, the characteristic of the three-year-olds’ imbalanced diet behavior appeared in three types of actions: preferring certain foods only, rejecting certain foods, and being indifferent to eating. Second, the causes of the three-year-olds’ imbalanced diet behavior appeared in three ways: the recipes that do not fit the development or senses of the children, a sensitive and uncomfortable body as well as state of mind, and home eating habits. The conclusions based on these results are that, first, the children’s imbalanced diet behavior at Saekdong kindergarten 3 year old’s meal time is that the children have the right to eat their favorite foods to the fullest, to be acknowledged for their dislikes, and to be respected as individuals with the right of choice. Second, the children's imbalanced diet behavior at Saekdong kindergarten 3 year old’s meal time is that the diet by the recipe considering the development of the children and the characteristics of the senses should be provided related to the three year old’s chewing sensation and spicy taste. Third, the children’s imbalanced diet behavior at Saekdong kindergarten 3 year old’s meal time is that it should be considered that children can eat in a natural and comfortable atmosphere because it can become a problem when the children feel stressed in the mind and body from being sensitive and emotionally uncomfortable. Fourth, the children’s imbalanced diet behavior at Saekdong kindergarten 3 year old’s meal time is closely related to the eating habits of their home, so it is necessary to guide their dietary habits connecting with their family.
