국내의 콤부차 연구 동향과 기사 분석

국문 초록

본 논문은 국내의 콤부차 연구 동향과 언론기사를 분석함으로써 콤부차 산업의 지속적 발전을 위한 시사점을 제시하는 데 연구 목적을 두었다. 이러한 목적하에 54편의 연구 논문(학위논문 23편, 학회지 31편)과 1,699건의 언론기사를 자료로 수집하여 분석하였다. 주요 연구결과는 다음과 같다. 1. 국내에서는 2003년 콤부차의 항산화 효능 연구를 시작으로 2020년까지 감귤이나 한방재를 첨가한 콤부차의 기능성 탐색 연구가 시행되었다. 2021년을 기점으로 식품영양학, 식품공학･식품과학 외에도 여러 학문 분야에서 연구가 이루어지면서 보다 다양한 재료가 이용되는 첨가물의 확장성이 확인되었다. 그러나 콤부차의 중요한 토대인 차에 관한 연구성과 축적에는 활성화가 요구되었다. 2. 언론매체에 반영된 기사의 소재 고찰로 콤부차 산업의 성장 요인이 파악되었다. 즉 국내 콤부차 산업의 성장은 콤부차 제조-발효-숙성 공정의 최적화, 다양한 향미 재료의 발굴, 제품 가공의 다각화, 소비자와의 접점인 온･오프라인 유통채널 조성, 코로나19 발발로 인한 면역력 증진의 필요, 영향력 있는 연예인들의 음용 화제, 맛과 건강을 동시에 챙기는 헬시플레저, 지역 농산물이 활용된 제품의 가치 소비, 당과 열량 저감화 선호에 의한 것이었다. 이와 같은 결과는 국내 학계의 콤부차 개발 고도화 연구, 기업의 신제품 생산 및 소비자와의 소통을 통한 제품의 가치 증진 노력의 필요성을 시사하였다.

영문 초록

This study aims to present implications for the sustainable development of the kombucha industry in South Korea by analyzing domestic research trends and media coverage. To this end, 54 academic papers (23 theses and 31 journal articles) and 1,699 news articles were collected and analyzed. The main findings are as follows. First, domestic research on kombucha began in 2003 with studies on its antioxidant properties, and between then and 2020, studies primarily explored its functional properties by adding ingredients such as citrus fruits and medicinal herbs. Since 2021, research has expanded beyond food and nutrition science and food engineering into various academic disciplines, confirming the increasing diversity of added ingredients. However, researchers must actively advance the accumulation of scholarly knowledge regarding tea, the essential base of kombucha. Second, analysis of news articles revealed several growth drivers of the kombucha industry in South Korea, including: the optimization of manufacturing, fermentation, and aging processes; the discovery of diverse flavoring ingredients; product diversification; the expansion of both online and offline distribution channels; rising health concerns and interest in immune-boosting foods following the COVID-19 pandemic; celebrity endorsements; the health-oriented healthy pleasure trend; the use of locally sourced agricultural products; and consumer preferences for low-sugar and low-calorie options. These findings suggest the need for intensified academic research to advance kombucha product development and for companies to enhance product value through new product development and active communication with consumers.
