케냐산 홍차류의 휘발성 향기성분

국문 초록

최근 몇 년 동안 국내에서도 홍차의 소비자층이 확대되고 있다. 이번 연구에서는 케냐산 홍차류 중에서오토독스 방법으로 제조한 케냐산 FOP 등급의 국내 브랜드로 출시된 잎차와 영국 브랜드로 출시되는 케냐산CTC 홍차에 대하여 품질평가에 중요한 휘발성 향기 성분을 비교 분석하였다. 휘발성 향기성분의 추출에는 동시증류추출(SDE)장치를 사용하였다. 휘발성 성분 농축물은 GC-MS에 의해 분리, 동정하였다. 동정 된 화합물의수는 47개와 48개로 비슷하였으나 크로마토그램의 패턴은 두 시료에서 많은 차이가 있었다. 케냐산 FOP는 꽃향기 화합물(FOP 17개와 CTC 14개)과 풋풋한 풀향기 화합물(FOP 9개와 CTC 5개)이 많았으나 케냐산 CTC는 홍차의 유효기간 내의 홍차를 시료로 하였으나 케냐산 FOP에는 없는 곰팡이 냄새성분도 있었고 지방분해물로 알려지고 홍차의 이취(off-flavor)와 관련된 성분들이 많았다.

영문 초록

The consumer base for black tea has been expanding in Korea recently. This study compared and analyzed the varieties of black teas produced in Kenya. For quality evaluation, the volatile flavor components of a leaf tea released as a domestic brand of FOP grade, manufactured by the orthodox method and a CTC method tea released as a British brand were compared and analyzed. The flavor compounds in the two kinds of Kenyan black tea (FOP and CTC) were extracted by the simultaneous distillation and extraction (SDE) method. The flavor extracts were analyzed and identified by gas chromatography-mass spectrometry. The number of identified compounds was similar at 47 and 48, respectively, but the chromatogram pattern of the two samples was very different. The Kenyan black teas had a lot of floral compounds (FOP; 17 and CTC; 14) and greenish compounds (FOP; 9 and CTC; 5). The Kenyan CTC black tea had a musty odor component, and many components related to the off-flavor also known as lipolysis products.
