어린이집에서 간식으로 전통 떡의 활용도를 높이기 위한 방안연구

국문 초록

오늘날 한국 여성의 사회참여가 증가함에 따라 영유아들이 사실상 가장 많은 시간을 보내는 곳이 어린이집이라 할 수 있다. 영유아기는 신체적으로 성장이 활발하고 활동량이 많아 열량섭취와 영양소의 상당 부분을 담당하는 간식의 중요성이 높다. 본 연구에서는 어린이집에서 제공하는 간식에 대한 종합적인 선행연구를 바탕으로 우리나라 전통 음식 중에서 떡의 간식으로서의 활용도를 높이기 위한 조사와 분석을 실시하였다. 분석을 위하여 서울, 경기지역에 소재한 민간 어린이집(20곳)의 교사 40명과 해당 어린이집에 다니는 영유아의 어머니 40명을 대상으로 2016년 10월 1 일부터 2개월 동안 설문조사를 실시하여 두 집단에서 생각하는 떡에 대한 인식과 현황을 비교분석하였다. 분석 결과 교사집단이 전반적으로 떡에 대한 인식이 더 좋은 것으로 확인되었고 어머니 집단과 교사집단 간에 떡에 대한 인식의 차이가 있음을 확인할 수 있었다. 본 연구의 목적은 식습관이 형성되는 영유아기 때부터 전통 떡의 맛을 익힐 수 있게 하여 우리 고유전통음식인 떡을 계승 발전시키는데 필요한 기초 자료를 제공하는데 있다. 또한 떡의 활용도를 높이기 위한 방안으로 설문에 응답한 어린이집 원장을 대상으로 심층 인터뷰를 실시하여 현실적인 방안을 제시하였다는 점에서 본 연구의 의의를 찾을 수 있을 것이다

영문 초록

These days, Korean children spend the majority of their time in early child care centers, as Korean women s social participation increase. As children grow fast and move much in early childhood, snacks are very important in providing considerable portion of calories and nutritions to early children. In this study, researches and analyses are conducted to enhance the usage of rice cakes among traditional Korean foods based on the comprehensive preceding researches on the snacks and between meals offered in early child care centers. For comparative analysis, surveys are conducted to both teachers in early child care centers and mothers who send their children to those institutions to find out the differences of recognition on rice cakes between the two groups. As a result of the study, teacher group is known to have better recognition for rice cakes overall and recognition difference is identified between the teacher group and mother group. The objective of this study is to provide basic knowledge in helping early children to be friendly with the traditional rice cakes, resulting in succession and development of the rice cakes. The significance of this study can be found in the respect that this study presented a practical and realistic method to enhance the usage of rice cakes in early child care centers by conducting in-depth interviews with the directors of the institutions.
