This study is a research on the tea making method of Boseong Noewoncha(腦原茶), which was restored by Mokpo National University's Institute of International Tea Culture and Industry as a service project for Boseong-Gun. In the Goryeo Dynasty, Noewoncha(腦原茶), the imperial tea was used as a gift to foreign countries, as a gift and a memorial gift to subjects, and as a donation to temples. Boseong, the largest producer of Korean tea with one hundred one self-sustaining tea growth areas, has used them since before the Three Kingdoms. Botjae's stepped tea field is where the Pogok tea place of Goryeo was located more than a thousand years ago. The village of Yaksan in Ungchi was Kaeuljeon(加乙田) tea countryside of the Three Kingdoms Period, and the village's front Kaeulpyeong(加乙坪) tea place was the origin of the famous Goryeo tea, Noewoncha(腦原茶). Jeda(製茶, Tea making) goes beyond the production of beverages cause of the needs of life, and has been passed down as a unique tea drinking culture with clear historical traces for a long time in the context of traditional culture. Most of the tea drinking and tea making methods, through the kinds and work of tea, were influenced by China, so the Three kingdoms exchanged in a large and similar manner. Accordingly, the tea making method of Noewoncha(腦原茶) is intended to be followed by the book “Bukwonbyeolrok” a representative tea book of Song dynasty. However, in this study, we reinterpreted the tea making method of Noewoncha(腦原茶) based on the characteristics of the Goryeo native tea recorded in “Sunhwabongsagoryeodogyeong”. The process of making the restored Noewoncha(腦原茶) was carried out in the order of picking tea leaves, sorting out tea leaves, withering, washing tea leaves, steaming tea leaves, cooling down tea leaves, pounding, shaping, drying, shortly putting them in boiled water and out, air cooling and storing them. This is the first step, which is the basic stage of the study of Noewoncha(腦原茶). The multi-dimensional research on this is an important opportunity to determine the development of Boseong Noewoncha(腦原茶) and to examine and correct the history of tea culture. We look forward to research and development that can open a differentiated consumer market by adding the characteristics of the region to Boseong Noewoncha(腦原茶) and aiming to be better than it is now.
