티 옥션의 발전과 블렌딩 산업의 근대화

국문 초록

본고는 19세기 영국 차 산업의 근대화와 차 문화의 대중화를 이끈 티 옥션과 블렌딩이 어떻게 상호 연동되어 발전되었는지 규명해 보았다. 19세기에 생긴 대표적인 티 옥션은 1861년 최초로 문을 연 콜카타의 티 옥션, 1883년 개장한 콜롬보의 티 옥션 등이었다. 1882년에는 선상경매도 도입되었다. 이러한 티 옥션의 확산으로 차 원료의 안정적인 공급망이 갖춰지고, 도매업자들은 최저 가격으로 최상의 찻잎을 구할 수 있게 되었다. 그리고 블렌딩을 거친 후 특정 상표를 단 상품이 최종 소비자에게 판매되었다. 이 과정에서 찻잎의 품질을 평가하기 위한 티 테이스팅 기법이 개발되고 발전하였으며, 표준화를 위한 찻잎 품질의 등급제도가 생겨 점차 정착하게 되었다. 그 결과 상인들은 티 옥션을 통해 세계 여러 지역에서 생산되고 운송되어 온 다양한 찻잎들의 특성을 파악하고, 여러 등급의 원료를 적절히 블렌딩함으로써 소비자들의 다양한 욕구를 충족시킬 수 있는 방법을 찾아내게 되었다. 여기에 대량생산 체제와 블렌딩 기술은 홍차 품질의 균일화와 가격의 안정화를 이끌었다. 차 산업 시스템 중 하나인 티 옥션의 발달과 블렌딩 기술의 고도화가 19세기 영국 차 산업과 문화를 발전시키는 원동력이 되었다.

영문 초록

This paper identifies how tea-auction and blending, which led to the modernization of the British tea industry and popularization of tea culture in the 19th century, developed inter connectedly. The first tea-auction in the 19th century was the tea-auction in Kolkata, which opened in 1861, and the tea-auction in Colombo opened in 1883, and a ship-board auction was also introduced in 1882. The birth and spread of tea-auction guaranteed a stable supply chain of tea leaves. Also, wholesalers can buy the best tea leaves at the lowest price. They blended leaves and sold products with their own brand to consumers. In this process, tea tasting techniques for evaluating the quality of tea leaves were created and developed. In addition, a tea leaf quality rating system to standardize products was established and gradually developed. As a result, merchants were able to identify the characteristics of various tea leaves transported from different parts of the world through tea-auction. they also were able to find ways to meet consumers’ diverse needs by blending various classes of tea leaves properly. In addition, mass production systems by machines and blending techniques have resulted in uniformity of black tea quality and stabilization of prices. The development of tea auction, one of the tea industry systems, and the development of increasingly advanced blending techniques were important factors that led to the development of the British tea industry in the 19th century.
