In the study, amino acid based surfactant as protein-surfactant is eco-friendly compound. So, amino acid based surfactant is expected as next generation surfactant. Amino acid based surfactant has high biodegradability, low toxicity and surface active properties. In this experiment, amino acid based surfactant, cocoyl glycine, was synthesized by glycine and triglyceride such as coconut oil and palm oil. And it was tested the surface tension, emulsifying properties, foam stability and HLB value. The synthesized surfactant was confirmed by FT-IR. The product of the N-acylglycine derived from coconut oil and palm oil was a white solid and showed a yield of 63.8% and 71.3%, respectively. The HLB was found to be 3.7 in the case of N-acylglycine derived from coconut oil and 4.8 in the case of N-acylglycine derived from palm oil, and application as a W/O emulsifier is expected.
