국문 초록
The storage proteins in wheat, particularly the high molecular weight glutenin
subunits (HMW-GS), play crucial roles in the processing of flour and the quality of bread
made from common wheat. These subunits are encoded by the Glu-A1, Glu-B1, and
Glu-D1 loci. This study aimed to determine the composition of high molecular weight glutenin
subunits in 89 Mongolian cultivars of spring wheat using KASP markers and sodium
dodecyl-sulfate polyacrylamide gel electrophoresis (SDS-PAGE). The result showed the
presence of the 5+10 allele at the Glu-D1 locus in Mongolian-developed varieties was
confirmed through SDS-PAGE, providing evidence for the synthesis of high molecular
weight glutenin subunits. The uniform presence of high molecular weight glutenin subunit
alleles across the tested cultivars contributes valuable insights into the bread-making
quality of Mongolian wheat varieties.
