Hotels are recently diversifying their business portfolio in order to satisfy various customers needs and create new demands. Their focus moves from traditional businesses such as accommodation, food and beverages to new ones such as duty free shops, restaurants outside of hotels, convention, and training facilities. And, bakeries are spearheading the new businesses. Top-notch hotels are also starting bakery business, which, in return, activates the bakery industry. Under such situation, there is a need for various studies of new hotel bakery products which are more customer-oriented as well as profit-oriented. In fact, however, there are few studies on new products made by bakeries inside as well as outside hotels. By studying customers behavior on bakery products, we can evaluate the market trends and suggest product development guidelines for hotel managers. In conclusion, it is needed to develop hotel bakery products which are based on customers needs.
