한방꽃차로서의 말린 괴화와 금은화의 휘발성 향기성분

국문 초록

개화 전의 꽃봉오리를 약용하는 식물 중에서 회화나무의 꽃봉오리를 말린 괴화(sophorae flos)와 금은화(lonicera flos)를 한방차로 활용하기 위해 기호성과 관련되는 휘발성 향기성분을 동시증류 추출법에 의해 추출하여 GC 및 GC-MS로 분석, 동정하였다. 괴화의 향기성분으로는 terpene hydrocarbone 16종, alcohol류 7종, ketone류 6종, ester류 3종 등 38종의 화합물이 동정되었다. 금은화의 향기성분으로 alcohol류 8종, terpene hydrocarbone 7종, ketone류 6종, aldehyde류 3종 등의 28종의 화합물이 동정되었다. 괴화나 금은화의 향기성분으로 꽃향과 달콤한 향에 관계되는 성분들도 있지만 괴화에는 cinnamic aldehyde, thymol, eugenol, methyl eugenol, caryophyllene이, 금은화에는 camphor, borneol, carvacrol, eugenol, methyl eugenol, caryophyllene 등과 같은 향신료 같은 향들이 많이 함유되어 있어 이들 꽃을 단독으로 기호성을 띄는 음료로 이용하기보다는 기능성을 활용하기 위해 녹차나 다른 허브류에 혼합하는 형태로 이용하는 것이 바람직할 것이라고 생각되어졌다.

영문 초록

Volatile flavor components in medicine flower teas from sophorae flos and lonicera flos were analyzed and identified. The extraction of volatile flavor compounds of sophorae flos and lonicera flos were accomplished by SDE(simultaneous distillation and extraction) method using a Likens and Nickerson’s extraction apparatus. The concentrated extract was analyzed by GC-mass spectrometry. The terpene hydrocarbons such as terpinene, ocimene, carene, copaene, caryophyllene, cubebene, isolongifolene, farnesene and terpene alcohols such as linalool, anethole, safrole, eugenol, methyl eugenol were found mainly as the volatile flavor components in sophorae flos tea. The terpene hydrocarbons such as carene, copaene, caryophyllene and curcumene, and terpene alcohols such as borneol, terpineol, carvacrol, safrole, eugenol and methyl eugenol were found mainly as the volatile flavor components in lonicera flos tea.
